DYAD Chardonnay was our first release in the wine barrel finish range. Recognised for its excellence with Gold Medals at The New Zealand Spirit Awards and The Drammys in 2022 and 2023.

Bottled at 7 years old, this whisky showcases the talents of Waiheke Whisky’s head distiller, Patrick Newton, previously crowned New Zealand Winemaker of the Year on three occasions.

Double distilled in copper pot stills and firstly aged in ex-Bourbon, this whisky has been finished for 2 years in a premium Mudbrick French Oak Chardonnay barrel. The barrel was wet filled; meaning the Chardonnay wine was emptied out and the new make spirit was introduced immediately.

This is a truly interesting whisky, with real New Zealand character – New Zealand malt was milled and distilled on Waiheke Island and the wine-finish achieved from Waiheke Island Chardonnay wood. Aroma: A rich and inviting nose, the Chardonnay character on the nose of melting butter and oak blends with sherbet lemons and honey. 

Palate: Umami flavours with sweet miso, lemon and butter. A deliciously smooth, oily mouthfeel and a long finish of toasted hazelnuts, bready malt and our trademark salinity.
