Waiheke Whisky DYAD Peat + Port

This fascinating and delicious expression was created by Patrick Newton our head distiller, and exemplifies our DYAD wine finish range.

Milled, mashed and fermented on Waiheke Island, then double distilled in copper pot stills in February 2018.  We milled a half tonne mash of malt, which was malted and wet-peated where it’s grown, at Gladfields in Canterbury, New Zealand.

We use New Zealand peat, sourced from the bottom of the South Island. New Zealand peat is a contrast to its Scottish counterpart. Without the lignin notes, you’ll taste smoke and earthy umami flavours which are deliciously rich and deep. 

Peat + Port was first aged in ex-bourbon casks for 4 years. The whisky was then finished for its last year in a Waiheke Island ‘Port wine’ Barrel, lending it a pleasing reddish hue and rich palate.

Patrick, an award-winning winemaker before he turned to distilling, also made the fortified wine for the finishing barrel, from Petit Verdot grapes grown just 300m from our Distillery. Another true Waiheke Island whisky story. 

Aroma: dark berry fruits, dried dates, orange peel, vanilla and peat smoke

Palate: rich and mouth filling with red fruits, caramel and smoke with a sweet subtle oak finish.
