  • American Oak Refill Single Cask TD0080 was distilled in February of 2006 and decanted in August of last year for a maturation of thirteen years in a single, 300L American oak cask previously filled with an older batch of Sullivans Cove Single Malt Whisky. Bottled at 47.1% ABV, this cask is one of two being made available simultaneously as part of the first ever American Oak Refill release under our Cask Variations series.

Description

American Oak Refill Single Cask TD0080 was distilled in February of 2006 and decanted in August of last year for a maturation of thirteen years in a single, 300L American oak cask previously filled with an older batch of Sullivans Cove Single Malt Whisky. Nose: Marshmallows, milk chocolate, coconut and warm leather along with sweet and earthy malt, lemon curd tart and apple pie. Freshly cut ripe orange, and raspberry jam with the sweet, thick, briny air of an early Summer morning at the beach.

Palate: Gentle texture glides across and fills the palate, as does the flavour. It’s intense and full, but by no means overbearing but rather quite genteel. Ripe banana,  fresh orange and lime juice, and a touch of mango. Coconut sugar, honey and caramel fudge fill out the sweet mid palate while pastry, macadamia and vanilla provide the earthy base notes. There is oak there, but it’s the stage for others to perform on, not a main character itself.

Finish: Jam, chocolate and shortbread biscuits (like a Wagon Wheel!), toasted walnuts and lots of coconut with Banana bread, lemon, and vanilla. A fun splash of lychee, blood orange and pineapple leads into a delicious mystery floral note. The texture is very long, full and very pleasant, carrying the malt and sea air along with it indefinitely.
